Vegan Bite Recipe: Judy’s Easy Enchiladas

Judy’s Easy Enchiladas


  • 1 package whole wheat tortillas
  • 1 large can or two small cans vegan re-fried beans
  • ½ container vegan sour cream
  • 1 avocado
  • salsa


  • ½ container vegan sour cream
  • 1 can green chile enchilada sauce

Combine vegan sour cream and enchilada sauce – set aside.


To assemble:

Spread tortillas with refried beans, vegan sour cream, sliced avocados and salsa. Roll up and place in baking pan. Spread sauce over. Cover with tin foil. Bake for 30-40 minutes until warm.

You can vary the ingredients to add things you like to the enchiladas by putting in olives, vegan cheese, onions, green chilies, etc.
